Due to its blade form it is very good for most of the kitchens cutting-work. The pointy tip allows to due fillet work too until a certain point where it is just to big for this kind of work.
The blade is made of carbon spring steel. Due to its high carbon content it is very easy†to sharpen.
After forging process it is quenched in oil to harden the steel.
