Mead dry / Honey wine
Honey wine that is not sweet? Correct. Unlike traditional mead, our mead was not interrupted during its maturation process. This allowed the sugar to continue fermenting into alcohol. Sweet mead is interrupted during the ripening process so that it retains its sweet note and thus contains less alcohol.
Now that our mead tastes less sweet and has a slight honey flavor, it is ideal as a drink for savory dishes.
Several centuries ago, people who had enough honey were already making mead. In Germanic/Nordic mythology, they called mead the "Gift of the Aesir" because of its transformation from honey water into a tasty, intoxicating drink.
